The ideal meal for breakfast, lunch or dinner
8 large eggs
4 medium yukon gold potatoes
1 medium yellow or vidalia onion
1/4 cup milk
2 tbsp. parmesan cheese
1/4 tsp black pepper
prick potatoes all over with a fork and microwave on high for 5-7 minutes (keep checking) add more time as needed. potatoes should be just fork tender
thinly slice onion, drizzle 1 tbsp olive oil into a nonstick, oven safe pan and sauté on medium heat until tender and lightly browned
whisk together eggs, milk, parmesan cheese and pepper
remove potatoes from microwave and slice into 1/2 inch pieces. Add them to the pan with the onions and cook for 2 minutes
add egg mixture, cook on stovetop 4-5 minutes until bottom of the frittata solidifies
transfer to oven, broil until top is no longer runny and lightly browned
enjoy with a side salad!
