Portobello Mushroom Done Right

Flavor packed and cheesy. The perfect one bite appetizer


  1. 1 package of portobello mushroom caps

  2. fresh mozzarella - mozzarella balls are a great shortcut

  3. roasted red peppers (homemade or store bought)

  4. 1 shallot, sliced

  5. balsamic glaze

  6. salt and pepper


  • clean mushrooms - with a wet rag gently rub the outside to remove any dirt

  • place mozzarella inside the mushroom cap

  • top with roasted pepper

  • place prepared mushrooms on a baking sheet lined with parchment paper

  • bake at 400 for 20 minutes

  • while the mushrooms are baking, slice shallot

  • heat oil on stovetop in a nonstick pan at medium heat

  • once hot add in shallots and fry for about 1 minute. remove from pan and place on a paper towel lined plate to absorb excess oil

  • when mushrooms are done remove from oven and arrange on a platter. top with crispy shallots and drizzle with balsamic glaze

  • garnish with basil (if you have it)
