Best Ever Grilled Chicken

If you are looking for a staple grilled chicken recipe that will NEVER disappoint…here it is! My mom taught me this technique a few years ago and I have not made grilled chicken any other way since.

Cooking the chicken dry before adding a marinade makes the chicken perfectly crispy around the edges while juicy and tender on the inside. 

Adding the marinade hot helps the chicken soak up all that sweet tangy flavor from the dressing, keeping it moist for the days to come.

This grilled chicken is the perfect make head / meal prep protein to have on hand. Because you add the dressing at the end, it will stay juicy all week long – no dried out chicken here!

This grilled chicken makes a yummy dinner on a Monday with some great easy sides. It will also be just as delicious on Tuesday, Wednesday and Thursday in a big lunch salad. I also love to add it to a quesadilla or on top of a burrito bowl. Long story short, I love to have this grilled chicken in my fridge all week long!

Best Ever Grilled Chicken

Ingredients

68 thinly sliced chicken breast

1/2 cup olive oil + 1 tbsp

1/4 cup balsamic vinegar

the juice of 1 lemon

1 tsp dried oregano

1 tsp garlic powder

1 tbsp flat leaf parsley, chopped

salt and pepper to taste


Instructions

pat chicken breast dry and season both sides with salt and pepper

heat 1 tbsp olive oil in a non stick or cast iron pan over medium heat

add chicken to pre heated pan and cook for approximately 4 minutes each side. this time will vary depending on the thickness of your chicken. cook chicken in batches if needed to avoid overcrowding the pan

meanwhile, whisk together olive oil, lemon juice, oregano, garlic powder, salt, pepper and balsamic vinegar

once chicken is done cooking, transfer to a large baking dish and while chicken is hot, pour the dressing all over. top with parsley and cover.

chicken can be stored and enjoyed for up to a week in the refrigerator
